Today is Valentine’s Day! Now I know this holiday isn’t for everyone and is hugely commercialised. Saying that, is there any holiday that isn’t now? Now I am not suggesting you spend hundreds of pounds on presents for the people you love. However why not take this opportunity to spread a little love. This Three Ingredient Fudge is a great idea as a gift. Make a batch and give little gifts to people, if you can bear to give it away. Looking for some other easy edible gifts? Try my chocolate crinkle cookies, hidden oreo cupcakes or orange and cranberry scones.

A confectioner, I’m sure, would not call this fudge, fudge. But this is a very very easy way of getting a tasty treat. It is very cost effective and the ingredients can be changed up. If you are looking to change the chocolate from milk into dark or white then you need to adjust the amount of chocolate you add. This is because of the amount of cocoa solids the higher the level of cocoa solids the less chocolate you need. Try Dark chocolate with chopped up candy canes, or white chocolate with chopped Oreos. There really is a huge list of flavour combinations to try out with this very simple base of two ingredients. This will not be completely solid like proper fudge and needs to be kept in the fridge or freezer in my opinion.

Fudge is a great sweet treat to have stashed away. And this fudge has a soft melting texture that is so moreish. The fact that you only need a few ingredients makes it super easy. If you have guests arriving then whip this up and chill quickly in the freezer and you have a great homemade morsel to offer with a cup of tea. I find a homemade item makes people feel extra appreciated, as well as giving you the feeling of immense accomplishment. When all you have done is stir some things in a pan, chill and cut – hardly any effort at all.

The fact that this Three Ingredient Fudge really can be made and chilling in 5 minutes really does make it a winner in my book. I know that life is busy and many of us do not have either the opportunity or the desire to spend hours in the kitchen. For me its one of my favourite places to be, however, I am willing to accept that I may be in the minority. This is the recipe for handmade gifts or just a quick dessert. Pieces of this fudge with ice cream would truly be fantastic.

You could either use the stovetop to melt the chocolate into the condensed milk or the microwave. Both work well and both create the same amount of washing up so it comes down to personal preference. This is a very easy recipe and fun for kids to do. The decoration is down to you, if you want to decorate the top of the fudge you need to do this quickly and as soon as you have poured it into the tin as it does start to firm up quickly. I suggest you gently press the decoration into the surface to make sure it adheres well.

Ingredients

  • 450 grams Milk Chocolate or Chocolate Chips
  • 1 x 397g Tin of Condensed Milk
  • 3 tbsp Freeze Dried Rasberries
  • Sprinkles, Mini Marshmallows & Freeze Dried Raspberries to Top

Instructions

  • Chop the Chocolate into small pieces

  • Put the Chocolate and Condensed Milk into a saucepan and heat to melt the Chocolate.

  • Once the Chocolate is melted add in the Freeze-Dried Raspberries and stir to combine.

  • Pour into a lined square tin and allow to cool.You can also chill in the fridge to speed this process up.

  • Remove from the tin and slice into squares, making 7 straight cuts vertically and horizontally you will end up with 64 pieces.

  • Enjoy, if you want to make these last longer keep in the freezer and then enjoy straight from the freezer no need to thaw it out.

LEFTOVERS TIP

This fudge makes fantastic presents, I also think a great use of this is to top a cheesecake or finely chop and fold through brownies and cookies for a fun texture.

Halloumi Steaks with Tomato JamThis recipe has become a real favourite in my house. Completely vegetarian and full of flavour. The different textures are fantastic and give each mouthful variety. It is also fairly easy to make. So you see you should make Halloumi Steaks with Tomato Jam, what are you waiting for?This is a true low effort meal. The amount of Jam this makes is enough for 8 portions and so if this is already made I zap it in the microwave to warm up and cook the rest and can have food on the table in 15 minutes!
