This Spring Salad with Homemade Lemon Poppyseed Dressing is a winner in our books, and we hope it finds a place on your dining table. Fresh greens, juicy strawberries, little bits of poppyseed, craisins, a cup of candied walnuts and a dash of fresh lemon juice all in one recipe – it’s like sunshine on a plate! The real star of the show is the homemade lemon poppy seed dressing. It pairs well with the other ingredients, making every bite an absolute joy.
The good thing about this salad is how easy it is to make. Whether you’re a busy mom juggling carpools and meal prep, or a family looking for a fresh and flavorful way to get your daily values in, this salad won’t disappoint. Plus, it’s so versatile! You can further enrich our recipe with some spinach or peppery arugula, throw in some crumbled goat cheese for that creamy feel, or switch up the strawberries with chopped Granny Smith apples.
Speaking of versatility, did we mention how quickly this dressing comes together? You can whip it up in a flash and have it ready in a few minutes. That means last-minute lunches just got a whole lot tastier (and nutritious!).
If you want a light and satisfying meal, this popular spring salad will quickly become a staple in your recipe rotation. Your whole family will thank you for it.
Spoiler alert: our lemony dressing is addictive, in a good way of course. Try it on leafy greens, grilled chicken, roasted vegetables, or glazed ham for a tangy twist of flavor. Remember, there’s no such thing as a perfect salad; it all comes down to personal preference. Don’t be afraid to experiment with different ingredients and find your own delicious way to dress up your greens. The amount of dressing you choose to put on your salad is up to you as well.
Our delicious salad stores just as well in an airtight container as it does in a sealed salad bowl. Just make sure you don’t toss all the dressing with the salad at once. Place the leftovers in the fridge and consume within five days.
