Goats Yogurt Mini Pancake Bites Recipe (2024)

These easy oven baked mini pancake bites are perfect for pancake day or a healthy family friendly breakfast all the year around!

With pancake day fast approaching, I've been working on some fun pancake recipes to share with you over the next few weeks. Today's recipe is for mini pancake bites, made with Goats Yogurt and Goats Milk from St Helen's Farm.

These cute little pancake bites are oven baked in a mini muffin tin and couldn't be easier to make. They'd make a fun healthy breakfast for pancake day, or indeed all the year around!

You may have seen me mention before that my husband has a dairy intolerance. When he first went dairy free about 8 years ago, it seemed a very daunting task to feed him and the family, but we gradually worked out dairy-free replacements where we could, and got used to going without some of our favourite cheese-filled meals where we couldn't.

A big breakthrough came when he discovered that he could actually tolerate goats milk products - at last cheese was back on the family menu! The options were pretty limited at the time but we quickly found that St Helen's FarmHard Goats Cheese was by far our favourite (the perfect substitute for cheddar), and our fridge has never been without it since.

Research indicates that peoples intolerance of cows milk is often due to the proteins; in particular Alpha-S1- casein. Goats milk has less of this protein than most cows’ milk which is one of the reasons it may be better tolerated by some people*, including my husband!

As well as the hard goats cheese, my husband also uses the Goats Butter from St Helen's Farm, but we hadn't yet tried any of their other products. I was challenged to create a pancake recipe for the whole family using St Helen’s Farm Goats Natural Yoghurt so it seemed the perfect opportunity to explore more of the St Helen's Farm range!

Goats Yogurt Mini Pancake Bites

Ingredients:

  • 1 large egg
  • 150g St Helen’s Farm Goats Natural Yoghurt
  • 1 tsp vanilla extract
  • 1 Tbs Honey or maple syrup
  • 150ml St Helen’s Farm Semi-Skimmed Goats Milk
  • 150g plain flour
  • 1 tsp baking powder

Toppings - choose from:

  • Blueberries
  • Raspberries
  • Dark Chocolate Chips
  • Banana

Method:

Preheat oven to 180°C (Gas mark 4/350°F).

Break the egg into a large bowl and lightly whisk.

Add theGoats Natural Yoghurt, vanilla extract and honey or maple syrup. Lightly whisk to combine.

Add the Goats milk and whisk again to combine.

Sift in the plain flour and baking powder and whisk again, just until smooth.

Set the mixture aside to rest for 10 minutes.

Spray 2 mini muffin tins with oil to grease.

Spoon the pancake mixture into the mini muffin tins, filling each hole no more than ⅔ full. I got about 40 mini muffins from the mixture.

Add toppings of your choice.

Bake in the preheated oven for around 12-15 minutes, until puffed up and lightly golden.

Once cool enough to handle, remove form the tin and serve warm, with more goats yogurt, maple syrup or honey to dip them in.

Note: Other toppings which would work well include strawberries, blackberries, milk or white chocolate chips, mini fudge pieces, a small dollop of jam or chocolate spread and even crumbled up crispy bacon!

These pancake bites went down really well with the whole family. The children loved them (and had no idea before tasting that they were made with goat's yogurt and goat's milk) and my husband was delighted that he could enjoy them too.

We'll be using more goat's milk products for the whole family from now on, especially after reading more about the benefits - as well as containing less of the allergenic proteins I mentioned above, goat's milk also has many other health benefits compared to cow's milk. It contains more easily digestible fats and proteins, is lower in lactose, is naturally lower in cholesterol and is a great source of calcium - great for growing kids!
