Yes friends, today we are celebrating one of my favorite parts of the Thanksgiving meal: the side dishes. And this Cheese Cauliflower Gratin is a side you and your guests are sure to love.

As I mentioned, I’m sharing this recipe for Cheesy Cauliflower Gratin. I meant to make it for you last year around this time but never got around to it.

My mom usually makes this dish for Thanksgiving and Christmas. (I believe she got the recipe from Bobby Flay, so a shout out to Mr. Flay!) It’s become a favorite in our family. I know because it’s one of the dishes that is always scraped clean.

What makes this side so delicious is the abundance of cheese: Monterey Jack, Parmesan, and goat cheese. I realize some of you may not care for goat cheese or be leary of using it, but I recommend giving it a try here. Once everything comes together, you won’t even know it’s there. However, it does give the gratin a wonderful creaminess and tangy depth of flavor that is beyond compare.

I’m also a big fan of this dish because it’s quick to make, and there’s minimal clean up during prep. You only need the pan you’re baking it in.

How to Make Cheesy Cauliflower Gratin:

Just place all of the ingredients in a 9×13-inch casserole dish and give them a good toss to mix them together.

After that, pop the pan in the oven uncovered for 30-35 minutes. That’s it!

You’ll want to let the gratin set a few minutes before serving. To dress it up, I added sprigs of herbs, but those are totally optional.

Ingredients

  • 1 large head cauliflower cut into florets
  • 8 ounces Monterey Jack cheese grated
  • 8 ounces goat cheese crumbled
  • 2 cups grated Parmesan
  • 1 clove garlic minced
  • 2 cups heavy cream
  • Salt and ground pepper to taste

Instructions

  • Begin by preheating your oven to 400 degrees F.

  • In a 9x13-inch baking dish, combine the cauliflower, cheeses, garlic, and heavy cream. Season with salt and pepper.

  • Place in the oven and roast for 30-35 minutes or until the cauliflower is soft and starting to brown on top.
