What is Monterey Chicken?

It’s believed that Monterey Chicken originated in Monterey, California. That said, we can attribute much of the popularity of this dish to Chili’s! It was a beloved menu item for years, but is no longer on the menu. (Whyyyy do restaurants do this to us?)

The Monterey chicken recipe consists of chicken breast topped with BBQ sauce, colby jack cheese, bacon, diced tomatoes, and green onions.

Chicken – We’re using boneless skinless chicken breasts for this Monterey chicken recipe but you could swap those out for boneless chicken thighs too.

Brine – You’ll brine the chicken first in a simple mix of kosher salt and warm water. This not only seasons the chicken throughout, it also helps keep the chicken moist and juicy when air frying so it doesn’t dry out. If you’re in a rush you can skip this step but we do recommend it if you’ve got the time!

BBQ Dry Rub – We season this chicken up with our favorite homemade BBQ dry rub recipe, but you can use any store bought dry rub here too.

BBQ Sauce – This Monterey chicken gets sauced up with your favorite BBQ sauce! For this recipe, we prefer our homemade bourbon BBQ sauce or a bottle of Sweet Baby Ray’s.

Cheese – We’re using shredded Colby Jack cheese to top this chicken. You could use just shredded Monterey Jack cheese, or even a different variety or blend of cheeses. Use what you’ve got in the fridge that sounds tasty.

Bacon – You’ll need to start with some already cooked and crumbled bacon. You might as well just make some air fryer bacon!

Diced Tomatoes & Green Onion – For topping the chicken, just like the Chili’s version!

We love this chicken topped with BBQ sauce and melted cheese! It’s just the right combination of flavors and the bacon, diced tomatoes, and green onion bring it all together. It’s so easy to prepare and it’s just like the kind you’d get from the restaurant. We love air fryer chicken recipes and this might be our new favorite!

We’ve tested loads of air fryers over the years and narrowed it down to the best of the best! Whether you’re looking for a basket style air fryer that fits nicely on your countertop or you want the toaster oven style air fryer, we’ve got the recommendation for you!

Serving Suggestions:

There isn’t a whole lot that doesn’t go well with chicken. Pretty much any side dish you can imagine is okay here but I’ve listed some particularly good choices below. Some of these are air fried and some are not!

Freezing & Storage Instructions:

You can keep any leftover chicken stored in an airtight container in your refrigerator for about 3 to 4 days. It can be reheated in the air fryer, the oven, or the microwave.

This chicken also be frozen for up to a few months. Let it cool completely before transferring to a freezer safe container. Thaw overnight in the fridge before reheating. We prefer to freeze it without the cheese and other toppings. Add those at the end when reheating.

Recipe FAQs:

Can I put raw chicken in the air fryer?

Yes you can! Not everyone realizes raw meat can be cooked in the air fryer but it’s perfectly safe to do as long as you cook the meat to the correct temperature. And not only is it safe, but it tastes great too! We love making air fryer hamburgers, air fryer boneless pork chops, and even air fryer turkey breast!

How long should you cook chicken in air fryer?

All raw chicken needs to be cooked to an internal temperature of 165 degrees before it is safe to consume. I’d recommend using a meat thermometer so you can make sure the food is safe and so you don’t overcook it. Hitting the perfect temp can be the difference between tender, juicy chicken and tough, dry chicken!

Can I make this chicken ahead?

This Monterey Chicken is perfect for meal prep with one slight change. Hold the cheese and other toppings to the side and add them once the chicken has been reheated. This will help the chicken taste it’s best.

Air Fryer Monterey Chicken is an easy homemade copycat version of a Chili's classic. This cheesy, saucy, tender and juicy chicken is topped with your favorite BBQ sauce, Colby Jack cheese, bacon, diced tomato and green onion!

Equipment

Ingredients

  • 4 chicken breasts boneless & skinless
  • 6 cups warm water
  • 3 tablespoons kosher salt
  • 1-2 tablespoons BBQ dry rub
  • 1/4 cup prepared BBQ sauce
  • 1 cup shredded Colby Jack cheese
  • 4 slices bacon cooked and crumbled
  • 1/2 cup diced tomatoes
  • 2 tablespoons diced green onions

Instructions

  • Fill a bowl or baking dish with the warm water and add the salt. Stir to combine.

  • Add the chicken to the bowl and place in the refrigerator for 1 hour to brine.

  • Remove chicken from the liquid and pat dry.

  • Season the chicken on both sides with the BBQ dry rub.

  • Spritz the air fryer basket with oil and place the chicken in the basket in an even layer.

  • Air fry at 380 degrees for 7 minutes. Brush the BBQ sauce over the chicken, flip, and brush with more sauce.

  • Cook for 3-5 more minutes or until a meat thermometer reaches 165 degrees.

  • Open the air fryer and carefully sprinkle the top of the chicken breasts with the shredded cheese. Close the air fryer basket and let sit, turned off, for 1-2 minutes to melt the cheese.

  • Sprinkle the bacon, tomatoes, and green onions over the top of the chicken and serve.

Notes

The brine for the chicken does make this more moist and flavorful, but if you’re in a rush you can absolutely skip this step.

When you add the cheese to the chicken, just place it back in the air fryer with the basket closed. No need to turn the air fryer on. The residual heat will melt the cheese without blowing it around.
